Celebrate National Margarita Day on February 22

National Margarita Day is observed on February 22. Inspired by the foam of ocean waves, the Jose Andres Salt Air Margarita is a signature cocktail that can only be found at Jaleo at Disney Springs, in addition to a few Jose Andres Group restaurants like China Poblana in Las Vegas and Ovamel Cocina Mexicana in Washington, DC.

Unlike classic margaritas and their salted rims, salt is added to the cocktail in the form of delicate air, allowing for just the right amount of salt in each sip.

For those that would like to try their hand at making the cocktail at home, the recipe is below:

Salt Air Margarita Recipe

Cocktail Ingredients + Directions

  • Ice
  • 1 1⁄2 ounces silver tequila (José likes Milagro)
  • 1 ounce Cointreau or Triple Sec
  • 1 ounce fresh lime juice
  • A spoonful of Salt Air (recipe follows)

Fill a cocktail shaker with ice. Add the tequila, Cointreau, and lime juice and shake well. Strain into a chilled margarita glass or coupe. Float a good spoonful of the salt air on top and serve immediately.

Salt Air Ingredients + Directions

  • 1 cup water
  • 1 teaspoon Sucro
  • 1⁄2 cup fresh lime juice (from about 5 limes)
  • 2 tablespoons kosher salt

Combine the water and Sucro in a small saucepan and heat over low heat, whisking constantly to activate the Sucro until the mixture just starts to bubble. Remove from the heat and let cool. Add the lime juice and salt to the Sucro mixture and blend with an immersion blender until the whole mixture is foamy. The salt air can be used immediately or stored in an airtight container in the refrigerator for up to 3 days.
